① [Starter] Whetting the appetite
Shirasu (whitebait) & ricotta cheese salad: Combines shirasu, an ingredient distinctive to Japan, with soft Italian ricotta cheese. Savory avocado, refreshing Japanese summer mandarin (amanatsu), and the lightly fragrant vermouth jelly come together to wake the palate in a clean, crisp way.

New onion soup: A soup made by slowly simmering new onions, in season and packed with sweetness, with the smoothness of mascarpone cream and the kick of pink pepper as accents.

② [Pasta & Risotto] Filling you up before the main
Octopus ragu basil fusilli: A short pasta with a savory ragu sauce made by slow-cooking chewy octopus, with celery, capers, and olives added for a generous Mediterranean flavor.

Iwate Prefecture chicken thigh tagliatelle: The essence of “Japanese Italian,” combining premium chicken from Iwate Prefecture with Japanese traditional ingredients like burdock, garlic scapes, and sansho pepper. Balsamic vinegar lifts the overall savoriness sharply.

Mussel risotto: A mussel risotto carrying a deep aroma of the sea, paired with fragrant fennel and pleasantly bitter cresson (watercress) for a great balance of flavors.
