Kirimugiya Jinroku (切麦や 甚六) in Shinjuku, Tokyo took over the name of "Jinroku (甚六, 1957-1990)," a restaurant the owner's father ran in Kanda, Tokyo, and opened in Shinjuku Gyoenmae in May 2015. Recognized for its reasonable prices and excellent taste, it has been selected for the Michelin Bib Gourmand two years in a row.

Kirimugiya Jinroku: Menu & Broth
Kirimugiya's udon broth is drawn from Hokkaido kombu, Setouchi sardines, dried shiitake from Miyazaki Prefecture, and katsuobushi. For the kake-dashi (pour-over broth), it uses a light soy sauce made by the old method in Soshima and mirin made since 1862 (Bunkyu 2), and for the tsuke-dashi (dipping broth), it uses Soshima's dark soy sauce and tamari soy sauce from Gujo, Gifu Prefecture. For sweetness, instead of sugar it uses mirin, junmai sake, wine, and domestic Japanese honey, in an effort to make "udon that captures flavors from all over Japan in one bowl."

Kirimugiya Jinroku's udon noodles reinterpret the old-style thin, soft noodle, with a moderate elasticity and chewiness. On the principle of making, cutting, and frying on the spot, it keeps a consistent quality regardless of the season.
