🦆 What is Kamotonegi? The Secret Behind the Broth
Kamotonegi (鴨to葱) means duck (鴨) + green onion (葱).
True to its name, this shop makes ramen with nothing but duck and green onion — no tricks, no shortcuts.
The broth uses just three ingredients: duck, green onion, and water. Every morning, carefully selected Japanese domestic duck (aigamo, 合鴨) from across the country is slow-simmered over low heat to create a deep, rich broth.
| Ingredient | Details |
|---|---|
| Japanese Domestic Duck | Sourced daily from Kyoto, Aomori, Iwate, and other regions |
| Green Onion | Sourced seasonally (choose from grilled, shredded, or yuzu onion) |
| Soy Sauce Tare | Blend of 3 soy sauces from Banshu Tatsuno, Chiba & Aichi |
| Custom Noodles | Original blend of Japanese whole wheat and wheat flour |

Green Onion Selection Guide (Pick 2 of 3)
Before you sit down, a staff member will ask you to pick 2 out of 3 green onion types.
💡 Recommended combo for first-timers: ① Grilled Whole Leek + ③ Kyoto Kujo Green Onion — the most balanced pairing.
| Green Onion Type | Details |
|---|---|
| ① Grilled Whole Leek (国産丸太白葱) | Grilled whole for sweet, savory flavor ➡️ Most popular, a must-pick |
| ② Sesame-Dressed Leek (国産白葱ゴマ和え) | Shredded leek with sesame dressing. Nutty and aromatic ➡️ Bold flavor option |
| ③ Kyoto Kujo Green Onion (国産九条ネギ) | Thin and tender. Fresh, clean taste ➡️ Cleanest, most refreshing option |

🎫 How to Order: Step-by-Step Guide
First-timers often get confused at the vending machine. Here's the process broken down into 3 simple steps.
① STEP 1 — Buy Your Ticket at the Vending Machine First
The order is: vending machine payment → get your ticket → then join the line. If you don't know this, you'll end up standing in line with nothing in hand.
※ The main store accepts cash only. (5-yen and 1-yen coins are not accepted by the machine.)

② STEP 2 — Line Up at the Designated Spot
After getting your ticket, wait at the designated queue area to the right of the shop. Turnover is quite fast since it's ramen.

③ STEP 3 — Choose Your Green Onion
Right before you're seated, a staff member will come over and ask you to pick 2 green onion types. Refer to the green onion guide above to make your choice. (※ Tsukemen orders will also choose garlic level.)

How to Avoid the Wait
Kamotonegi is one of the longest lines in all of Ameyoko. Choose your timing wisely to cut down your wait.
| Time Slot | Crowding | Expected Wait |
|---|---|---|
| 9:00–11:00 AM | 🟢 Quiet | Under 5–10 min |
| Lunch (12:00–2:00 PM) | 🔴 Busy | 30–40 min |
| Dinner (6:00–8:00 PM) | 🔴 Busy | 40+ min on weekends |
| Late Night (after 10 PM) | 🟡 Moderate | Fast turnover |

🍜 How to Enjoy Your Ramen
🍜 Kamo Ramen (鴨らーめん) — The Standard Duck Ramen
This is Kamotonegi's signature dish. Compared to tonkotsu ramen, it's much less oily with a clean, refreshing taste.
- Start with the broth: Take a sip of the clear broth first — it's all about the harmony of duck and green onion.
- Eat noodles with green onion: Load up your noodles with the grilled leek for the fullest flavor impact.

🍜 Confit Kamo Ramen (コンフィ 鴨らーめん)
Prepared using the French confit technique — the duck is slow-cooked at low temperature for maximum tenderness. Generous portions of silky duck meat sit on top. If you love meat, this one's for you. The rich duck fat combined with the noodles fills your mouth with a savory, nutty aroma.

🍋 Switch Up the Flavor with Yuzu Kosho
Try the yuzu kosho (柚子胡椒) that's on every table.
- Use the dedicated spoon to take just a tiny amount.
- Place it on the rim of your bowl.
- Gradually mix it into the broth with your chopsticks — enjoy the citrusy kick and gentle heat as it transforms the flavor.

If you've arrived at Ueno via the Skyliner from Narita Airport, skip the usual tonkotsu and start your Tokyo trip with a bowl of clean, light duck broth ramen instead.
You'll finish the whole thing, and once you're back home, you'll keep thinking about it. That's the kind of ramen this is. 🧡
